Avocado Sushi

I’ve been practicing my sushi rolling skills all weekend! Making sushi is seriously no easy task. I am in love with Japanese food, well really all Asian food to be honest. Sushi is just one of those things that is so incredibly versatile. I mean avocado sushi, dragon rolls, spicy tuna rolls, shrimp tempura.. come on, they all sound amazing right?

I’ve also been seeing sushi burritos and sushi tacos EVERYWHERE lately and I’m dying to try them.



I’m pretty that sushi is one of those things I will always crave (ok as I write this I realize that pho and pizza are probably tied with sushi too). I love the fact of having to use chopsticks. I’ve been practicing eating with chopsticks so much in the past few months that I considering myself an expert (lol) for an Italian girl.

Don’t be intimidated by the thought of making homemade sushi. As the age old saying goes, practice makes perfect!



Avocado Sushi with pink rice (serves 2)


  • 2 avocados, sliced
  • 4 sheets of nori
  • 1 cup jasmine rice
  • 1 beet, grated
  • a bowl of water (to wet your hands)


  1. Cook 1 cup of jasmine rice in 3 cups of salted water. Rice will be sticky.
  2. Once cooked, add the grated beet and mix until rice turns pink.
  3. Make sushi: Place nori sheet on a bamboo sushi mat. Press rice onto the nori sheet, wetting your hands when needed to prevent too much sticking. On the end closest to you, make a line with sliced avocado. Carefully, roll the sushi with the bamboo mat, gently pressing it down as you roll. Repeat for desired amount of roll or until sushi rice runs out. Enjoy!

*Note: Extra sushi rice can be eaten as is. Pink rice is so pretty anyways!
