Banana bread is one of my all-time FAVORITE dessert/snack/breakfast items. I love making my vegan banana bread from the blog. This chia pudding is basically banana bread in a cup. Full of banana flavour and chocolate chips – this banana bread chia pudding will become one of your go-to breakfasts!
Chia pudding is such an easy breakfast to make. Does it get any easier than throwing ingredients in a jar, shaking it and sticking it in the fridge overnight? I think not. Chia pudding is seriously a lifesaver!
This banana bread chia pudding is made with ingredients you already have in the kitchen like:
Banana Bread Chia Pudding (serves 1)
- 3 tbsp chia seeds
- 1 tbsp flaxseed meal
- 1 cup almond milk
- 1-2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 banana, mashed
- 2 tbsp chocolate chips
- banana chips for topping (optional)
- optional: add 1 tbsp cacao powder to turn this into double chocolate banana bread chia pudding
- Add all ingredients in a air-tight glass jar. Seal and shake.
- Refrigerate overnight and enjoy the next morning topped with banana chips.
