Beef Burrito Bowls

Mexican food is my favorite and I especially love burritos! This burrito meets salad recipe is easy to make and you’ll have it on a weekly repeat!

As you probably know by now, I love salad especially in the summertime since it’s light and fresh. Plus, who really wants to turn their ovens on when it’s 30 degrees celsius outside? This burrito bowl salad is the solution!

Lately, I’ve been really into buying pre-washed salad mixes. The laziness is kicking in since I’m always eating summer salads so pre-washed makes my life so easy. I still end up washing up lots of salad from the garden since it’s fresh from the backyard, which means there is dirt and an occasional ladybug on it – doesn’t get more organic than that. My garden is finally in full swing with kale, romaine and other veggies and herbs. The thing I’m most excited for is watermelon radishes! The green tops keep growing and I’m just anticipating the moment I can pull them out and slice into those beauties. Gosh, I wish I could garden all year, but let’s enjoy it while we can.

This beef burrito bowl requires 4 main components: cumin-spiced beef, cherry tomato salsa, brown rice and lettuce. As for toppings, it’s up to you to add your favourites like avocado, corn, jalapeños, sour cream, yogurt, corn tortillas, tortilla chips, etc. I love adding black bean dip, yogurt and lots of guacamole on my burrito bowls.

You will need:

brown rice

salad of choice

cumin-spiced beef

cherry tomato salsa

toppings of choice: avocado, yogurt, tortillas chips, corn, etc

Easy Beef Burrito Bowl (makes 4 bowls or jars)

  • 2 cups cooked brown rice
  • 4 cups salad of choice
  • other toppings: avocado, tortilla chips, tortillas, hot sauce, cheese

Cumin-spiced beef:

  • 1 lbs lean ground beef
  • 1 onion, diced
  • 1 1/2 tsp cumin
  • 1 tsp oregano
  • 1 1/2 tsp smoked paprika
  • 1/2 tsp chipotle
  • salt and pepper to taste

Cherry-tomato salsa:

  • 2 cups cherry tomatoes, quartered
  • 1/2 red onion, diced
  • 4 tbsp cilantro, diced
  • 1/2 tsp cumin
  • 1/2 tsp cayenne
  • salt and pepper to taste

Directions:

  1. Rice: Cook rice according to directions on package.
  2. Salad: If using pre-washed salad, set aside. If not, wash and chop your favorite lettuce.
  3. Cumin-spiced beef: Heat 1-2 tbsp of oil in a saucepan over medium high heat. Add diced onion and cook 4-5 minutes. Add beef and spices and cook until done.
  4. Cherry tomato salsa: Quarter cherry tomatoes and add diced red onion and cilantro, cumin, cayenne and salt and pepper to taste. Toss to incorporate.
  5. Assemble: Add brown rice, lettuce, cumin-spiced beef and cherry tomato salsa to each bowl or layer in jars. Top with your favorite toppings and enjoy!
