Blueberry! Cheesecake! Oatmeal! Yes, you read that correctly (go back and read it if you didn’t acknowledge the exclamation points). Who says you can’t have cheesecake for breakfast? If someone says you can’t, don’t talk to them. You don’t need that kind of negativity in your life..

Lately, I’ve been on a HUGE oatmeal kick. It’s probably the fact that the temperature is dropping like it’s hot but oatmeal and I are bffs these days. Have you seen my other cheesecake oatmeal varieties? Chocolate chip cookie cheesecake oatmeal and Chocolate cheesecake oatmeal.

Growing up, my mom always said ‘eat your oatmeal, it sticks to your bones.’ While I’m not so sure about its bone-sticking abilities, oatmeal keeps you full for a long time. If I know that I have a busy morning ahead, I love fueling first thing with oatmeal since it keeps me satisfied for hours.

Although this is a hot and cozy bowl of oats, the colours of the blueberries and lemon zest remind me of summer. Gosh I miss summer! Don’t get me wrong, the seasons in Montreal are fun and I love the snow at Christmas time, but I was not built for -30F degree weather. It’s already getting pretty chilly and my 10 minute walk from my house to the gym is starting to feel like a marathon to Alaska. At least I’ve got this warm blueberry cheesecake oatmeal to hold onto the nostalgia of summer.

All kidding aside, this oatmeal is super creamy and you’ll think you’re eating dessert for breakfast!

Blueberry Cheesecake Oatmeal (serves 1)
Ingredients:
– 1/2 cup oats
 – 1 cup almond milk
– 1 tbsp chia seeds
– 2-3 tbsp cream cheese
– 1-2 tbsp honey (adjust according to preference)
– 1/4 cup blueberries
– lemon zest
Directions:
1. Pour oats, almond milk, chia seeds and honey in a saucepan over medium heat. Bring to a boil and simmer for 10-12 minutes.
2. Add cream cheese, blueberries and lemon zest and mix until the cream cheese is melted into the oats. Enjoy!
