On this gloomy Thursday, I decided to brighten up my day with a bowl of sunshine – aka this blueberry mango smoothie bowl. With just a few ingredients, you can whip up a glorious bowl of ice cream-like deliciousness.
Blueberry Mango Smoothie Bowl:
- 1 cup frozen blueberries
- 1/2 cup frozen mango
- 1 banana
- a splash of Silk’s cashew milk
- Toppings: 1 Nature’s Bakery mango fig bar, coconut chips, Bob’s Red Mill chia seeds and rolled oats
- Place the banana, frozen blueberries, frozen mango and splash of cashew milk in a blender. Blitz until smooth.
- Pour the smoothie bowl mixture into a bowl and top with a chopped mango fig bar, coconut chips, chia seeds and rolled oats.
