Chicken Salad Veronique

This chicken salad Veronique is creamy, easy to make and oh-so satisfying.

This easy chicken salad Veronique is a quick make-ahead lunch option. It travels well for work, lunch or a picnic. Plus, it’s loaded with flavour. I love the juicy bite you get from the grapes.

I personally enjoy open-faced tartines the most but this chicken salad is great in a sandwich or wrap. It would also make a great filling for collard wraps – something I have yet to try.

You will need:

poached chicken



dijon mustard

avocado oil mayo

full-fat plain yogurt

salt & pepper

Chicken Salad Veronique (serves 4)


  • 2 cups shredded chicken
  • 2 ribs of celery, diced
  • 1/2 cup red grapes, halved
  • 2 tbsp avocado oil mayo
  • 2 tbsp full-fat yogurt
  • 2 tsp dijon
  • salt and pepper to taste


  1. Shred 2 large chicken breasts to equal 2 cups of shredded chicken. I love poaching chicken and then shredding it. See the method here.
  2. Add shredded chicken to a bowl. Add diced celery, red grapes, mayo, yogurt, dijon and salt and pepper. Mix to combine and serve as a sandwich or open-faced tartine.
