Chocolate Buckwheat Waffles

It’s Saturday morning, you woke up without an alarm and you’re ready for a special breakfast, one you don’t have time to make during the week. It’s waffle time!

I love waffles! They’re basically pancakes with abs right? Their perfect little square pockets can hold maple syrup, peanut butter and really anything that you want to drizzle.

As I kid, I always looked forward to Saturday morning because my mom would make either waffles or pancakes as I got ready to watch the “One Saturday Morning” lineup.

These chocolate waffles are made with buckwheat flour, to make a naturally gluten-free waffle. They’re fluffy and oh-so chocolatey!

Chocolate Buckwheat Waffles (makes 10 waffles)

Ingredients:

  • 1 cup buckwheat flour
  • 4 tbsp cacao powder
  • 1 tsp baking powder
  • 1 1/3 almond milk
  • 2 eggs
  • 1/4 cup maple syrup

Directions:

  1. Combine the milk, egg and maple syrup in a bowl and whisk.
  2. Mix the dry ingredients in a separate bowl and mix until well combined.
  3. Add the dry ingredients to the wet mixture and whisk.
  4. Cook waffles on a greased waffle iron. Enjoy!
