Oatmeal Chocolate Chip Waffles

Happy 2017! I hope you all enjoyed the Christmas holiday and had an amazing new year!

It’s a new year and that means new, delicious recipes! This waffle recipe couldn’t be easier since it’s all made in a blender. My new Blendtec blender (Designer 725 model) is seriously THE best! It’s like the smartphone of blenders. I love how it’s touchscreen and gives you messages. It even greets you hello and goodbye – this is a blender with good manners!

These waffles are basically a ‘throw everything in the blender and give it a whirl’ kind of recipe! So quick and easy make – a great recipe to make when meal prepping so you have waffles for the week.

Lately I’ve been making pancakes and waffles in bulk and keeping them in the fridge for a quick breakfast or snack! Unless my little brother gets into my batch, they last me a week. I’m seriously considering getting a mini fridge in my bedroom. Long romantic walks to the fridge would be much shorter haha!

These oatmeal chocolate chip waffles are delicious topped with anything and everything! Keep them simple with maple syrup or honey or go crazy with chocolate peanut butter and fruits. The choice is yours. I also love topping my waffles with peanut butter, pepitas, goji berries and chia seeds to include my favorite superfoods.

Oatmeal Chocolate Chip Waffles (makes 8)

Ingredients:

  • 1 1/2 cups oat flour
  • 1/2 tsp cinnamon
  • 2 tsp baking powder
  • 3/4 cup milk of choice
  • 1/4 cup coconut oil, melted
  • 2 tbsp maple syrup
  • 2 eggs
  • desired amount of chocolate chips
  • maple syrup or honey for serving

*ย NOTE: Oat flourย can be made by blending oats in the blender

Directions:

  1. Place all ingredients in a blender and blend until incorporated.
  2. Cook waffles in a greased waffle iron. Enjoy immediately or store in the fridge for up to 1 week or freeze for longer.

  1. So excited to try these! I have been thinking about making healthy waffles for my teething baby. I think these should be perfect. We haven’t tried chocolate yet so I may switch that for raisins. Thank you for such healthy and crafty receipes!
