Bake oatmeal skillets have been my obsession lately! They’re so quick and easy to make and are the perfect breakfast meal prep. I love making baked oatmeal ahead of time for those mornings when I’m so busy and need a quick, nourishing breakfast!
I have never been camping in my life but it’s definitely something that I’d love to experience. I love being in nature, although I’d be quite worried about sleeping outdoors in the wild in case of I don’t know, BEARS! Animals are cute and all but wild animals make me a little uneasy. Two summers ago, I went to a local beach up north and had my first wild animal experience. There was a coyote in the distance but still close enough that I could be it’s next prey. Let’s just say I was ready to climb a tree or run to the car for shelter in 5 seconds. Put me somewhere where I could be a wild animal’ potential next meal and I lose my sh*t.
Nonetheless, I’d love to face my fears and go on a camping trip. I want to go camping to 1. be in nature, 2. spend time with my loved ones doing outdoor things like fishing (on my bucket list) and 3. to cook in the wild (this might be my number one reason tbh). Between making a fire myself, cooking on cast iron (awesome for camping) and s’mores, I’m in it for the food – aren’t I always. No pre-made or canned food here, I’d go all out with pancakes on the cast iron, mac and cheese, grilled veggie kabobs and grilling the fresh catch of the day, if I’m lucky enough to catch some on my first time fishing. Note to self: bring cash to buy off a skilled fisherman.
This s’mores baked oatmeal has a total summer feel since after all, s’mores is the ultimate campfire dessert. The best part is you don’t need to be camping in the wild to enjoy this – PHEW! Now you can eat s’mores for breakfast, disguised as oatmeal. It’s super chocolate-y and studded with mini marshmallows. Feel free to also add in some crushed graham crackers! My other baked oatmeal favourites include carrot cake oatmeal and banana bread oatmeal but you better believe that this s’mores baked oatmeal will be added to the oatmeal rotation because I want s’more and s’more of it – get it?
You will need:
rolled oats + oat flour
chocolate chips + mini marshmallows
Come to think of it, this s’mores baked oatmeal would be great to prep ahead of time to bring along camping. You can eat it as is or even warm it up on the fire. After all, dessert for breakfast is always a good idea right?
Chocolate S’mores Baked Oatmeal (serves 6-8)
- 1 cup rolled oats
- 1/2 cup oat flour
- 1/2 cup cacao powder
- 1/2 tsp baking powder
- 2 eggs
- 2 tbsp coconut oil, melted
- 1/4 cup + 2 tbsp maple syrup
- 1/4 cup almond milk
- 1/4 cup chocolate chips
- 1/4 cup mini marshmallows
- Preheat oven to 350F degrees.
- In a bowl, combine rolled oats, oat flour, cacao powder and baking powder. Mix.
- In a separate bowl, whisk eggs, coconut oil, maple syrup and almond milk until incorporated.
- Add wet mixture to the dry ingredients and mix.
- Fold in chocolate chips and marshmallows.
- Bake at 350F degrees for 15-20 minutes. Cool and enjoy! Can be stored in the fridge for up to 5 days.
