Flourless Brownie Muffins

I think it’s safe to say that I’m a MAJOR chocoholic! I’m obsessed with chocolate but then again, who isn’t? This brings me to a very serious issue. Are you a chocolate or vanilla person? I must say I’m starting to really love simple vanilla treats, but chocolate will always hold the number 1 spot in my heart!

I’ve been posting a lot of chocolate goods on the blog lately. From raw chocolate chia cookies to oatmeal chocolate chip waffles to vegan chocolate donuts – I’m going chocolate crazy and in the words of Miley “[I] can’t stop!”

I’m so excited to be sharing my first muffin recipe today! These mini flourless brownie muffins will become your new addiction. Don’t say I didn’t warn you! After I made my first batch and hid them in the fridge, my family gobbled them up. Guys, I NEED A MINI FRIDGE in my room!

Not only are these brownie muffins decadent and healthy but they’re oh-so-easy to make. They’re so easy that you don’t even need a bowl. Yes, you read that right, because everything is made in the blender. I’m using my new Blendtec blender (Designer 725 model) and this baby gets the job done quick. Seriously, making muffins is so quick in blender!

These cute little mini muffs are flourless since I used oat flour. Don’t have oat flour? Don’t worry! You can make it simply by blending steel cut oat yet again, in your blender. Don’t have a mini muffin pan? Use a regular sized pan but note that you will get fewer muffins.

Let’s get blending!

Brownie Muffins (makes 17 mini muffins)

Ingredients:

  • 1.5 cup oat flour
  • 1 tsp baking powder
  • 1/3 cup cacao powder
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1/4 cup almond milk
  • 2 eggs
  • desired amount of chocolate chips
  • optional toppings: chocolate chips and pecans

Directions:

  1. Combine all ingredients in a blender or bowl.
  2. Once combine, pour into a mini muffin tin lined with muffin liner (or greased).
  3. Bake at 350F degrees for 10 minutes. Let cool completely and enjoy!
  • NOTE: To make 12 standard-sized muffins, double the recipe, add an extra 2 tbsp of oil and bake for 12-13 minutes.

  1. The ingredients don’t list any nuts or chocolate chips but it looks like both of those ingredients are in the muffins in the photos. I would appreciate knowing amounts.
