Gingerbread Apple Loaf

There are 6 days until Christmas! No big deal (actually, huge deal) BUT have you decided what desserts you’re making? If you haven’t thought of it yet, I’ve got you covered! My fellow foodie friends and I have a lineup of 4 delicious and easy desserts featuring a Christmas favorite: gingerbread spice!

Christmas music is on repeat and I’ve got half of my Christmas shopping done. It’s the most wonderful time of the year *cue Buddy voice from Elf*

No joke guys, I love Christmas! From spending time with family to giving gifts and seeing someone’ face light up – Christmas bring so much joy. Not the mention the dessert. If you didn’t know, Italians go all out for Christmas. We don’t settle with just one or two desserts, we prepare a whole sweet table (sometimes Italian weddings have a dessert ROOM. Yes, life goals I know..)! I think a sweet table is a great idea since it provides variety from cookies to loaves to cream puffs to little bites. Today is all about variety since I’m collaborating with 3 lovely fellow Canadian gals for a holiday dessert exchange. These sweet treats are perfect if you’re hosting, have been invited, want to gift edible goods or are just craving something sweet for yourself at home!

If you’ve been reading my blog for a few months now, you know I love a good loaf. From Banana bread to Pumpkin bread to Cranberry Orange Walnut bread, I love all loaves equally! They’re such  a nice dessert for hosting but also amazing to give as a gift. Wrap it up in a cute Christmas box or container and go bring it to your neighbor, friend or loved one!

I’ll be making another gingerbread apple loaf on Christmas eve to bring to my family’ house along with other goodies. I’m planning on making the sweet treats my fellow foodies below have made. Get ready for these drool-worthy photos guys!

Ashley is one of my new friends on Instagram and let me just say, her pictures always have me DROOLING! She loves to bake all sorts of healthy desserts from fudgy brownies with matcha frosting to whole wheat biscotti to snickerdoodles, she does it all the healthy way! Look at this skillet. That perfect spoonful is screaming ‘EAT ME!’

Now time for the gingerbread apple loaf!

GINGERBREAD APPLE LOAF (makes 1 loaf)

Ingredients:

  • 2 cups whole wheat flour
  • 1/2 cup coconut sugar
  • 1/2-1 tsp gingerbread spice
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 3/4 cup apple juice (or milk of choice)
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 cup apples, cored and chopped

*Gluten-free option: Substitute the whole wheat flour for 1 cup oat flour + 1 cup gluten-free all purpose flour

Gingerbread spice:

  • 2 tbsp ground cinnamon
  • 2 tbsp ground ginger
  • 1 tbsp ground cloves
  • 1/2 tsp ground nutmeg

Directions:

  1. Preheat oven to 350F degrees. In a large bowl, combine the whole wheat flour, coconut sugar, gingerbread spice, baking powder, baking soda and sea salt. Mix to combine.
  2. In a separate bowl, combine the apple juice, eggs and melted coconut oil. Whisk to combine.
  3. Add the wet ingredients to the dry ingredients and gently mix until everything is well incorporated. Fold in the chopped apples.
  4. Place bread mixture in a loaf pan lined with parchment paper or greased with oil. Bake for 45-55 minutes. It’s ready when a toothpick comes out clean. Enjoy!
