Mushrooms are one of my favourite fungi – pun intended! I love them in scrambles, breakfast hash, stir frys and now STUFFED mushrooms! I created these olive and feta cheese stuffed mushrooms when I taught a mini cooking class at the Women’ Show in Quebec city (pictured below).
Being part of the Women’ Show with the Miscela team and teaching a cooking demo was a first for me but there’s a first time for everything right? I got outside of my comfort zone and loved every minute of it! This cooking demo really sparked my passion for food even more and reassured me that I definitely want a career in the food world. If it hasn’t become obvious, I love food and being in the kitchen and blogging are my favourite pastimes.
This cooking demo felt like I had my own television show (THE dream) and despite technical difficulties (the countertop stove took forever to heat up.. thank God I pre-boiled the eggs haha), I didn’t panic because I was in my happy place where I’m 100% comfortable to ‘own it’ no matter what comes my way!
I look forward to more events like these. I love making food and watching people’ faces while they eat it. There is such pleasure involved with food and that’s something I love being a part of!
Back to these cute stuffed mushrooms! They’re stuffed with feta cheese, olive Miscela and almond flour to make them gluten-free but feel free to use wheat bread crumbs if you’d like. They’re a quick vegetarian appetizer for the holidays but really year-round.
Stuffed Mushrooms (makes 12 stuffed mushrooms)
- 12 mushroom caps
- 4 tbsp almond flour (non gluten-free option: wheat breadcrumbs)
- 2 tbsp olive Miscela
- 2 tsp feta, crumbled
- Wipe mushrooms with a damp paper towel to clean them. Remove mushroom stems from mushrooms.
- Make stuffing: combine breadcrumbs, olive Miscela and crumbled feta and mix to incorporate.
- Stuff mushroom caps and bake at 350F degrees for 20 minutes. Enjoy warm!
