Peanut Butter Cup Grain-Free Overnight Oats

Say hello to the new oatmeal in town or should I say BUCKmeal since it’s made with buckwheat flakes! I’ve been a huge fan of buckwheat for 2 years now. Don’t let the name fool you, it’s not actually a wheat. Buckwheat is naturally grain-free and gluten-free so it’s perfect for anyone with an intolerance. It’s also great for anyone who wants to add a new oatmeal variation in their life to spice things up!

Like your typical jar of overnight oats, these grain-free oats are SO EASY to make. If you’re busy and on-the-go in the morning, you definitely need to start incorporating overnight oats into your routine. Place all the ingredients in a jar and shake it… like a polaroid picture, duh! (Is there any other way? haha)

I’ve been making these buckwheat oats at least once a week lately and I am obsessed. If you’ve never tried buckwheat, you should definitely give it a try to broaden your oat horizons!

I’m currently eating a bowl of this peanut butter cup oatmeal right now as I type and it’s oh-so creamy.

Peanut Butter Cup Grain-Free Oatmeal

Ingredients:

  • 1/2 cup buckwheat flakes
  • 2 tbsp cacao powder
  • 2 tbsp chia seeds
  • 1-2 tbsp chocolate chips
  • 3/4 cup milk
  • 1 tbsp peanut butter
  • 1-2 tbsp maple syrup
  • pinch of salt
  • optional: chocolate chips and peanut butter for serving

Directions: 

  1. Place all ingredients in a jar. Seal jar and shake until everything is combined.
  2. Refrigerate overnight.
  3. Enjoy the next morning cold or heat it up to enjoy warm.
