Peanut Butter Popsicles

Dear summer, where have you gone?

Is it just me or have the past few months just flown by, I feel like last week was June and then I blinked and boom, we’re nearing the end of August. I’m not ready to say goodbye to summer, especially considering that our weather hasn’t been very summer-like this year in Montreal.

One way I’m holding onto summer is with ice cream, specifically popsicles. I’ve been making my 2-ingredient chocolate fudgesicles all summer long and I am in love with them. Today I’m sharing a new version: peanut butter popsicles! They’re just as refreshing and, super creamy thanks to one of my favorite kitchen staples, peanut butter.

You will need:

coconut cream

peanut butter

maple syrup

sea salt

chocolate for drizzling (optional)

Peanut Butter Popsicles (makes 6 popsicles)


  • 1 can of coconut cream
  • 1/2 cup creamy peanut butter
  • 1/4 cup maple syrup
  • a pinch of sea salt
  • melted chocolate for drizzling (optional)


  1. In a bowl, whisk coconut cream, creamy peanut butter, maple syrup and salt until well combined.
  2. Pour into popsicles holds and refrigerate overnight or at least 6 hours. Enjoy!

  1. Agreed, summer has gone by way too quickly! As much as I love the fall, I need just one more month of summer! These popsicles look delicious though! I love peanut butter and chocolate together!
