‘Tis the season for drinking endless cups of hot chocolate.
Now that the weather is “freeze your butt off” cold, I have officially entered hibernation mode. Although I love skating, building a snowman and the occasional outing to cross country ski (it’s a real workout), I prefer to venture off for those activities on mild winter days. Any day colder than -5 means I’ll be curling up into a ball, under a warm blanket with a cup of hot chocolate.
This peppermint hot chocolate has been my favorite lately. It’s so easy to make at home and that subtle peppermint tastes adds a nice flavour, and also cuts the sweetness a little bit. Peppermint and chocolate truly are a match made in dessert heaven.
Now let’s talk about toppings. Do you go crazy with your hot chocolate? Maybe you like whip cream, a chocolate drizzle, marshmallows, a caramel drizzle, a sprinkle of cinnamon, or a combination of these. I like to keep my hot chocolate simple, just with a generous handful of marshmallows. I love when they get all melt-y and turn into a frothy-looking topping (see picture above).
Peppermint Hot Chocolate (serves 2)
- 2 cups milk of choice
- 1/4 cup chocolate chips
- 1/4-1/2 tsp peppermint extract
- marshmallows for topping
- Combine milk, chocolate and peppermint extract in a saucepan. Whisk until chocolate has melted and milk has heated.
- Pour into mugs and enjoy with marshmallows and your favorite fixings.
