Phytosterols are plant sterols that appear to block the body’s absorption of cholesterol and can reduce blood cholesterol levels. They are not known to adversely affect the absorption of fat-soluble vitamins in normal-weight individuals. However, it has been reported that in individuals with a genetic condition called sitosterolemia, phytosterol intakes higher than 2 g/day can increase blood cholesterol and, therefore, may lead to plaque buildup and heart disease (18).

Conventional foods enriched with nonesterified phytosterols can be used to fortify low fat and fat free foods. The IFR specified that the food matrix of fortified products be selected to maximize the cholesterol-lowering efficacy of phytosterols (58 FR 2302 at page 2379, January 6, 1993). Techniques for increasing phytosterol solubility and incorporation into conventional foods include dissolving them in heated fats, re-crystallization following cooling or acid hydrolysis, mechanically pulverizing crystalline phytosterols and emulsifying them with lecithin.

Clinical trials indicate that the daily consumption of up to 2.5 g/day of phytosterols from fortified foods is not associated with any adverse effects, including on carotenoid status or fatty acid composition. Moreover, limited data suggest that phytosterols have anti-inflammatory properties and attenuate the secretion of inflammatory mediators by immune cells.

Omega-3 fatty acids

The omega-3 fatty acids are polyunsaturated fats that perform important functions in your body. Like other fats, they are chain-like molecules with oxygen and hydrogen atoms attached to each carbon atom. The difference is that the fatty acids in omega-3 are unsaturated, meaning that they have one or more spaces where hydrogen can latch on (as opposed to saturated fat, which has no space for hydrogen).

There is evidence that consuming ALA, EPA and DHA helps lower blood triglycerides, reduce cholesterol levels and raise HDL cholesterol. This may help prevent or treat cardiovascular disease, such as atherosclerosis; depression and other mental disorders; arthritis, including rheumatoid arthritis and other chronic inflammatory conditions; cancer; and other health conditions.

Vitamin D

Vitamin D (also known as calciferol) is a fat-soluble vitamin that’s naturally present in a few foods, added to others, and available as a dietary supplement. It is also produced endogenously when ultraviolet (UV) rays from sunlight strike the skin and trigger vitamin D synthesis.

Although some studies suggest that vitamin D supplementation may reduce the risk of certain cancers, other research has shown no relationship. Moreover, the Food and Nutrition Board (FNB) committee that established Dietary Reference Intakes for vitamin D found insufficient evidence to establish an adequate intake for most outcomes except bone health.

From about late March/early April to the end of September, most people can make all the vitamin D they need through direct sunlight on their skin. Adults and children over the age of 1 year need 10 micrograms (400 IU) of vitamin D a day. A microgram is 1,000 times smaller than a milligram (mg). Taking more than this amount can lead to vitamin D toxicity, which causes calcification of soft tissues in the body including the lungs and heart valves, renal failure, and death.

Vitamin C

Vitamin C is a water-soluble nutrient found naturally in some foods and added to others. It functions as an antioxidant, improving the absorption of non-heme iron and speeding up the healing of wounds. It also supports the activity of white blood cells. At high doses, however, it can switch roles and become a tissue-damaging pro-oxidant.
