I’m a strong believer in chocolate everyday!
These raw vegan brownies have all the chewy goodness you expect in a brownie plus healthy fat (from the walnuts) and antioxidants (from the cacao powder). They’re also free from any processed sugars since they’re naturally sweetened by dates.
You can also make brownie bites with this recipe. Simply roll the batter into any sized balls you’d like instead of pressing the mixture into a dish.
A few whirls in the food processor or blender and you’ll have these brownies ready in no time! Let’s get started!
Raw Chocolate Brownies
(makes 8 brownies or lots of brownie bites)
- 1 cup walnuts
- 3/4 cup dates, soaked
- 2 tbsp. cacao powder
- Soak dates in warm water for 5-10 minutes (this will soften them).
- Place walnuts in a food processor and pulse a few times until they are broken down.
- Drain and pit dates.
- Add dates and cacao powder to the walnuts and blend until a brownie mixture forms.
- Press into a parchment lined dish to make brownies or roll into balls to make brownie bites – you decide how you like your brownies! Enjoy immediately or refrigerate for later.
