Strawberry Coconut Cheesecake Oatmeal

There’s a new cheesecake in town and you can eat this one for breakfast. I’m talking strawberry coconut cheesecake oatmeal!

The temperature has been dropping lately and I’ve been craving all things spring! This strawberry coconut combination reminds me of warm summer days and it’s something to boost our breakfast mood while we wait for this long winter to finally come to an end.

I love cheesecake flavoured oatmeal. From chocolate cheesecake to blueberry cheesecake to chocolate chip cookie flavours. They are all so DECADENT!

Strawberry Coconut Cheesecake Oatmeal (serves 1)

Ingredients:

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1/4 cup shredded coconut
  • 1 cup almond milk
  • 2-3 tbsp cream cheese
  • 1-2 tbsp maple syrup (or honey)
  • 1/4 cup chopped strawberries (or freeze fried strawberries soaked in warm waterr
Directions:
1. Pour oats, almond milk, chia seeds, coconut and maple syrup  in a saucepan over medium heat. Bring to a boil and simmer for 10-12 minutes.
2. Add cream cheese and strawberries and mix until the cream cheese is melted into the oats. No-cook option: Add all ingredients to an air-tight glass jar and shake. Refrigerate overnight and enjoy the next morning, cold or warmed up. Enjoy!
