These baked stuffed mussels are made with sundried tomato Miscela, adding so much flavour without doing any work. Miscela is made of vegetables, dried fruits, herbs and spices and is certified gluten-free and vegetarian. It’s a secret ingredient in the kitchen anytime you want to add colour and flavour with minimal work.

I love using Miscela for stuffings like my Olive and Feta Stuffed Mushrooms. It makes it so quick and easy. Seriously, you can prepare these little appetizers in under 30 minutes.

I love how the mussels look like hearts when they’re open – such a cute little detail to make a valentine’s day appetizer even more special. These mussels are only 3 ingredients: mussels, sundried tomato Miscela and breadcrumbs. If gluten-free, feel free to substitute for gluten-free breadcrumbs or almond flour.

These stuffed mussels are inspired by my mom – I’m learning to love all types of seafood from her!

Stuffed Mussels (makes 24 mussels)

Ingredients:

  • 24 mussels
  • 8 tbsp sundried tomato Miscela
  • 6 tbsp fresh breadcrumbs (gluten-free option: almond flour)

Directions:

  1. Steam mussels until open.
  2. In a bowl, combine sundried tomato Miscela and breadcrumbs.
  3. Scoop some sundried tomato mixture into each mussel.
  4. Bake mussels at 400F degrees until breadcrumbs are golden, about 5 minutes. Enjoy!
