Sweet Potato Toast

This sweet potato toast is a super easy breakfast item to spice things up!

I love toast for breakfast! My favorite suspects are avocado toast topped with a poached egg or peanut butter toast topped with sliced bananas and cinnamon. For a less basic toast, I adore toast with ricotta, fresh figs and honey. Figs are a summer luxury and I enjoy every minute of them while I have them in the hot months of the year.

These sweet potato toasts take your breakfast game to a sweet level. I could honestly eat sweet potatoes everyday. Breakfast, lunch and dinner. If anyone would like to challenge me to it, I am totally up for it.

I am not a fan of low-carb food but I truly find the sweet potato toast trend so unique and fun to eat! To be completely honest, I especially love making these when I run out of my favorite bread (lol). I love buying bread at local bakeries a local shop I go to often makes my favorite seedy 6 grains loaf and spelt bread.

This sweet potato toast is soooo incredibly easy to make. You only need one simple ingredient you likely have in your kitchen: SWEET POTATOES. Then all that’s left is deciding what toppings to add to your toast. Let you imagine run wild!

Sweet Potato Toast (makes 4-5 “toasts”)


  • 1 large sweet potato
  • toppings of choice

My favorite guacamole:

  • 1 avocado
  • zest of 1 lime
  • 1 tsp lime juice
  • a pinch of cayenne
  • salt and pepper to taste


  1. Wash and dry sweet potato. Cut into 1/2 inch slices.
  2. Cook sweet potato toast – Option 1: Toast sweet potato slices in the toaster 2-3 times on the highest setting or until tender. Option 2: Brush sweet potato with oil and bake at 350F for 15-20 minutes.
  3. Make sesame lemon guacamole: In a bowl, mash avocado and add lemon juice plus zest, sesame seeds and salt and pepper to taste.
  4. Top sweet potato toast with sesame lemon guacamole and enjoy!
