Burrito bowls are one of my favorite dishes EVER! Seriously, they can be made so versatile with whatever you have on hand, and I love meaty ones just as much as a vegetarian or vegan burrito bowl.
Although I give some measurements for these burrito bowls, they are totally up to you. I make my burrito bowls smaller if it’s a light snack/I’m not very hungry or bigger when I’m starving. It’s not about eating less, it’s about eating better, so eat until you’re full!
I’m using black bean dip as a source of protein in this dish so load up on it. It’s so smooth and I usually keep adding more of it as I continue eating my bowl because I’m addicted. I also like to add more beans, like chickpeas, kidney beans or more black beans. If you want a meaty burrito bowl, you need to try my easy pulled chicken. As for toppings, you can go totally wild here! Guacamole, salsa, chips, yogurt/sour cream, pita bread, corn, beans, legumes, tortillas, EXTRA guac… the world is your oyster!

Vegetarian Burrito Bowl (serves 2)
- 1 cup brown rice, cooked
- 4 cups lettuce of choice (I’m using romaine)
- 1 large tomato, chopped
- 4-6 tbsp black bean dip
- 3-4 tbsp salsa of choice or corn Miscela
- tortilla chips
- Fill each bowl with 1/2 cup cooked brown rice.
- Top with romaine lettuce dressed in olive oil and apple cider vinegar, chopped tomatoes, salsa of choice, tortillas chips and black bean dip. Add any other mixings you’d like. Enjoy!
