Whole Wheat Pumpkin Pancakes

Rise and shine, it’s pumpkin pancake time!

These whole wheat pumpkin pancakes are a new addition to my breakfast game. Fun fact, the first blog post I ever wrote was a quinoa pumpkin pancake recipe. Truly, this shows my love for pancakes and all the pumpkin-themed food that comes along with fall.

These pumpkin pancakes are a one-bowl recipe that you can whip up for breakfast 5 minutes!

You will need:

whole wheat flour

milk of choice

pumpkin purée

pumpkin pie spice

coconut sugar

baking powder + baking soda

Whole Wheat Pumpkin Pancakes (serves 2)

Ingredients:

  • 1 cup whole wheat flour
  • 2 tbsp coconut sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1 cup milk of choice
  • 2 tbsp pumpkin purée

Directions:

  1. In a bowl, combine whole wheat flour, coconut sugar, baking powder, baking soda and pumpkin pie spice. Mix.
  2. Add milk and pumpkin purée and whisk to incorporate. Do not over-whisk.
  3. Cook on a greased griddle or pan. Enjoy with maple syrup or melted chocolate.
